Corn Casserole with a Kick – Yummy Party Side Dish

If you are looking for a delicious side dish for your party then you have to try this Corn Casserole. This has become one of my favorite dishes that I cannot get enough of.

Last Thanksgiving my brother in law found this recipe for what I call a Corn Casserole with a Kick, but it is actually called Cajun Corn Pudding.  It was featured on Diners, Drive-Ins and Dives and the recipe comes from LA Pines in New Orleans.

My brother in law likes to get fancy with his cooking sometimes and I am so glad he did because this has become one of my favorite dishes I have had make many times since then for me. Yes I can make it myself now that I have the recipe, but why do that when he is so good at it by now right? So this past weekend we got together for a BBQ and of course I requested another batch of this yumminess and he delivered – I have the best in laws, how many can say that? lol

I decided to take some pictures of it and share the recipe so you can WoW your party guests with this dish.Even though it is a Cajun Dish I did not want to scare anyone away with that because while it has some spice to it it is not overly spicy.  I think it is more of a Kick and that is why I changed the name to what I call it.  Best part is that all the kids enjoy this too and my niece and nephew are picky eaters.

Here is the Recipe for this Corn Casserole with a Kick:

  • Butter for your Baking Dish
  • 1/4 Cup Fine Breadcrumbs
  • 4 Ears of Sweet Corn
  • 2 Tbsp Olive Oil
  • Sea Salt
  • 1/4 tsp Cayenne Pepper
  • 6 Slices of Bacon Chopped
  • 3/4 Cup of Diced Onions
  • 3/4 Cup Diced Bell Pepper
  • 2 Cups Heavy Cream
  • 1 Cup Milk
  • 5 Eggs
  • 1/2 Cup Grated Parmesan Cheese
  • 1/2 Cornmeal
  • 1/2 Cup Sugar
  • 2 Tbsp Freshly Ground Pepper
  • 1/2 tsp Grated Nutmeg

Preheat your oven to 350. Butter the bottom and sides of your 3 quart Baking Dish. Sprinkle the Breadcrumbs evenly to coat the bottom and sides of the dish.

Cut the Corn off the Cobs in a large bowl, then scrape the cob across the bowl a second time to release all the Corn Milk and then set that aside.

Heat Olive Oil in a large skillet over Medium/High Heat, add Corn, 1 1/2 tsp Salt and Cayenne Pepper. Saute for 2 to 3 minutes. Add Bacon and saute until crispy. Add in Onions and Bell Peppers until barely tender and then remove from heat.

In a Medium Bowl whisk together the Cream, Milk, Eggs, Parmesan Cheese, Cornmeal, Sugar, Pepper and Nutmeg until frothy. Add in the Corn Mixture and stir till combined. Pour that into your Baking Dish and bake for Approx. 35 to 40 Minutes until firm.

Serve it HOT !!

This will make about 8-10 (4 ounce) Servings or one very large portion just for me – lol

Here are some close up pictures of my first serving – notice I said first. I am tellin’ ya this is sooo Delicious. I am sad because I just finished the last of my leftovers today and I am drooling over the picture – I want to eat more !! I love this heated up for Breakfast the next day. It is one of those things you can eat for any meal I think, but definitely a great Side Dish for your next party or family dinner.
