Greek Pasta Salad Recipe – Great for BBQs

Looking for a Delicious Pasta Salad Recipe to make for your upcoming BBQ’s? Look no further because this Greek Pasta Salad Recipe is the one, Trust Me.

I am going to share with you my Secret Greek Pasta Salad Recipe so I guess it will not be a secret anymore. It is just so yummy that I have to share and besides it can still be my secret since none of you are my neighbors that I know of right? This recipe is one that I have been making for so many years and even the kids love it.

I just recently made it to go along with our Greek Night Dinner since it was the perfect match to some Chicken Gyros my Sista Peep cooked up. She even makes the best homemade Tzatziki Sauce, yum yum yum.  That is mine pictured to the right – it was soooo good that I cannot wait to have it again. Sista Peep went back to work now so I have to wait for her days off  to have that again since it is her specialty and when we make it again I will share that recipe too.

I have a thing for Greek food even though I am 100% Italian, it is one of my favorites. You can stick Feta Cheese on anything and I am good to go. When I was prego with my son I even craved Stuffed Grape Leaves and my poor hubby had to drive far to get them each time (lol), but he did – what a guy !!

Ok enough of my Blah Blah Blah lets get down to business with the recipe….

My Secret Greek Pasta Salad Recipe: (shhhh)

  • 1 Cup Mayonnaise (Hellmann’s is always the best)
  • 1/3 Cup Milk
  • 1/4 Cup Lemon Juice
  • 3/4 Cup Fresh Finely Chopped Mint Leaves (I have used non fresh last minute, but Fresh is BEST)
  • 1/2 Cup Fresh Finely Chopped Parsley (Again I have used non fresh here too at times – but Fresh is BEST)
  • 1/2 Cup Feta Cheese Crumbled (I always add in lots more – lol)
  • 1 Tsp Salt
  • 1/2 Tsp Pepper
  • 7 Ounces of Pasta – Cooked, Rinsed with Cold Water and Drained
  • 2 Medium Tomatoes Seeded and Chopped
  • 1 Medium Cucumber Seeded and Chopped
  • 1 Cup Sliced Pitted Black Olives (I always add more of these too)

Makes about 8 to 12 Servings – Of course I never make this without Doubling it (more for me Yeah !!)

Note: You can use any shape Pasta you like BUT I always use either Rotini’s or Pasta Curls if I can find them, I prefer them because the Feta and Sauce sticks to them better than if you were to use Elbows.

In Large Bowl Mix together Mayo, Milk, Lemon Juice, Mint, Parsley, Feta Cheese, Salt and Pepper. Then add in your Pasta, Olives, Tomatoes and Cucumbers and Toss really well.

Stick into Fridge to cool and allow flavors to blend. Mix Occasionally to continue coating. Best if made day before.

I am tellin’ ya this is sooo good, I am almost mad that everyone likes it as much as I do since I can eat it for Breakfast, Lunch and Dinner and I never get too.
