How to Make Homemade Cheez-Its

If you love the taste of Cheez-It Crackers then you will definitely love the taste of these Homemade Cheez-Its. So why not WoW your party guests and give this recipe a try.

I am a definite Cheez-It lover and I am so the one that says “Get your own Box”. When I have a box in my hands no one gets any and I usually sit and eat the whole thing – I know nuts right? Yes sad but true. It is one of my favorite foods I just do not share – I can admit my selfish ways. lol

So I have to give credit where credit is due and it was actually my Sista Peep who made these Homemade Cheez-Its.  We were suppose to make them together, BUT my kids had been sick and in addition to that I just quit smoking and she did not want to be murdered over a Cheez-It Recipe. I can understand that – no one is safe around me at the moment (lol). I am happy to say I am 4 days Smoke Free !!!

So last night she motivated herself to bake up a batch of these delicious treats and today I get to share with you step by step how she did that. She said they were Delicious and they tasted just like the real deal, but different and better.  I wish I could have tried them, but I have to take her word for it and wait until the next batch. My doctor has me on a freaky diet (long story) so I could not taste them even though I want to so bad. Yup you heard me – No Smoking and a Freaky Diet – I would stay away from me too if I could.

So here is what you need to make a batch of these Homemade Cheez-Its:

  • 8 ounces Sharp Cheddar Cheese – Grated
  • 3 Tbsp Unsalted Butter – Room Temperature
  •  1 Tbsp Vegetable Shortening
  • 1/2 tsp Salt
  • 1 Cup Flour
  • 2 Tbsp Ice Water
  • Coarse Salt for Sprinkling

So gather up all your ingredients. Start by Grating your Cheddar Cheese.  Next Combine Cheese, Butter, Shortening, and Salt in a bowl and Mix well with your Mixer. The mixture will be crumbly. Slowly add Flour and then the Ice Water. You may add a few more drops of water to help it come together but be careful not to add too much. You don’t want a wet dough.

Pat the dough into 2 discs and wrap in plastic wrap and chill for at least 30 minutes (or longer).

So far so EASY right?

Time to make Crackers !!! Preheat your oven to 375.

Using parchment paper roll each disc to 1/8 inch or less and cut into 1 inch squares (a pastry wheel or pizza wheel is easiest). Use a toothpick to punch a hole into the center of each square. Place on your cookie sheet (Sista Peep recommends you give it a light spray with Cooking Spray).

Note:  If you have difficulty separating and transferring the crackers onto the baking sheet return the parchment paper to the refrigerator for 10 minutes (while you roll out the 2nd dough disc).

Bake for 10 – 15 minutes or until puffed and browning around the edges. If you pull them out too soon and the crackers will not have the desired crispiness you want. If you pull them out too soon then simply return them to the oven for 2-3 more minutes.

Make sure to watch the last few minutes of baking as these will burn easily.

Once done let cool and ENJOY !!!
