How to make Leprechaun Hat Cupcakes

If you are planning a St. Patrick’s Day Party then I have some fun cupcakes I created that you can share with the kids and your party guests.  Of course I documented the Step by Step directions with photos right here to share how easy they are to make.  I kept seeing the Leprechaun Cakes and thought How cute would it be to have a Leprechaun Hat top each Cupcake that is edible.  If you follow my posts you should know I am a HUGE cupcake fan.

Being I am married to an Irish Man and my kids are 1/2 Irish of course – I always make sure to do something special for them on St. Patircks Day and Green Food Coloring becomes my Best Friend. My kids always have a nice glass of  Green Milk and even Green Pancakes or Eggs for breakfast and they love that. They especially got excited for these Leprechaun Hat Cupcakes even though they came a bit early this year. I may have to make them again so they can enjoy them for dessert after they eat their Corned Beef Dinner.

This was my first time putting these together and you can follow my ideas or even get inspired to play off my idea and make any changes you feel would work for you. So let me share what I did to create these, which I think came out adorable. Oh and let me add they were very Yummy to eat as well and perfect with of course a Big Glass of GREEN Milk.

This is what I used to create my Leprechaun Hat Cupcakes:

  • Cake Mix of Choice made into Yummy Cupcakes
  • 1 Tub Vanilla Frosting
  • Cake Mate Icing in Black (used large Tube with Tip)  & Yellow (Used small Tube writing icing)
  • Green Food Coloring
  • Cookies for Hat Base
  • Marshmallows
  • Green Sugar Sprinkles

Take out your Vanilla Frosting and add it to a Mixing Bowl.

Now add in some Green Food Coloring – just enough t give you a nice lighter shade of green. I chose to do a lighter green to frost the cupcakes with and then later we will darken the frosting for the hats. Make sure to mix it really well.

Now frost your all your cupcakes – lick fingers if needed – lol. Then set aside. Do Not use all the frosting you will need more to frost the hats.

Gather your items for the Leprechaun Hats. I chose to make a certain number of hats and left some cupcakes plain to add on Green Sugar Sprinkles.  So get your Marshmallows, Cookie Bases – I used Shortbread Cookies for my base cause my hubby likes them, but you can use any type of cookie as long as it is bigger than the Marshmallow and smaller than the top of your cupcake. I also had Cake Mate Decorating Icing in Black and the writing icing in Yellow & Green (if you want to add on some clovers).

Now add some more Green Food Coloring to the frosting left to make a deeper green color.  First you want to start frosting your cookie. Just do the top and the sides NOTE: It will get messy on your fingers so have some towels handy. Then place a small blob of frosting on the top of your cupcake this way the cookie will stick. Then place your frosted cookie on the cupcake and press it down to secure.

Now lets frost the Marshmallow. For this I frosted the sides so I could hold on and then I placed it on top of the cookie and then frosted the top. Then once you have created all your hats stick them into the fridge for a few to let the frosting harden a bit. You can make any touch ups later.

While you wait for those you can take the cupcakes set aside plain and add some Green Sugar Sprinkles. I just like having options if someone does not want to eat the hat and all and it looks nice to have variety when you plate – I like the sparkle effect it adds too.  So just sprinkle or dip your cupcake top into the sprinkles.

Now it is time to add that black belt around the Leprechaun Hat.  For this I used the Black Cake Mate Decorating Icing and the extra tip that has the flat middle. If your icing is thick you can place the entire tube into some hot water to get it soft. Then take your icing and make a band completely around the base of the Marshmallow. Then let it sit for a bit before you add on the belt buckle.

Now using the Cake Mate Yellow Writing Icing simply add a rectangle buckle to the black belt to complete the look.

And here they are looking Yummy!!! You can also use your Green Writing Icing to add clovers onto the hats or even add some small Edible Sugar Shaped Clovers. Mine are simple. but you can really kick them up a notch if need be.

And here they are plated with my other cupcakes and ready to serve. I am off trying to find that Pot of Gold at the end of the Rainbow that appeared, hopefully I will be back soon!!
