Lemon Blueberry Cookies

Have you every tried Lemon Blueberry Cookies before? If not you have to try this recipe they are so yummy and perfect for your upcoming Parties.

This is another recipe my Sista Peep baked up a few weeks ago and I must say these were delicious. I would describe these cookies like a Lemon Shortbread with Blueberry bites. It is not a strong flavor of Lemon, but just enough. If you can say a Cookie tastes refreshing I would say this one does – it is a light cookie with a Sweet taste that I fell in love with. The kids really liked them as well. I am waiting for my Sista Peep to bake me up another batch.

I have now trained my Sista Peep to photograph as she bakes so I can share with you the steps when the results are Yummy. This one was Yummy so here we go…. Oh Thanks Sista Peep, you are so good to me.

Here is the Recipe for these Lemon Blueberry Cookies:

  • 1/2 Cup-Butter (Softened)
  • 1/3 Cup Sugar
  • 2 Egg Yolks (Room Temperature)
  • 1 Tsp grated Lemon Peel
  • 1 1/4 Cup  Flour
  • 1/4 Cup Cornstarch
  • 1/4 Tsp Baking Powder
  • 1/4 Tsp Salt
  • 1/3 Cup Dried Blueberries (Must be Dried – Not Fresh)
  • Sugar on hand for Dusting the Cookies

Preheat oven to 375

Line a  Cookie Sheet with Parchment Paper or spray with Cooking Spray. In a large bowl combine Sugar and Butter and beat on medium speed until fluffy. Add in Egg Yolks and Lemon Peel.

In a separate bowl combine Flour, Cornstarch, Baking Powder and Salt. Gradually add Flour to butter mixture and beat on low speed just till crumbly. Stir in Dried Blueberries.

Using your hands form dough into a ball. On a sheet of wax paper knead dough til it holds together.

Divide the dough in 1/2.  Form each 1/2 into a disc shape, cut into 1/4ths. Roll each quarter into a disc, again cut into 1/4ths.  Each 1/2 will now give you 16 pieces for 32 cookies total.

Roll each piece into a ball and place 2″ apart on cookie sheet. Flatten each ball with a glass dipped in sugar.

Bake @ 375 for 12-14 min or until cookies are lightly browned around the edge

***Notes from Sista Peep: Dried Blueberries can usually be found in the isle with the raisins or at you locale Natural Foods Store. She also said that Craisins would work in this recipe too.***
