How to Make Potato Chip Cookies

Have you ever made Potato Chip Cookies before? If not you have to try these, they are a mix of Sweet & Salty all in one and they are absolutely delicious. Have these out at the next Kids Party and they will be amazed that they are eating a Cookie that has Potato Chips in them.

My Sista Peep made these for us and I must admit I was a bit skeptical when she told me she was making cookies using Potato Chips. Being a Big Potato Chip lover I was quite curious on how these would taste and to my Surprise they were very yummy. The Potato Chips gave them just the right amount of Salty along with a little crunch in your bite. The Chocolate Drizzle was the perfect touch to add a taste of chocolate, but next time I am requesting these with Chocolate Chips. Just reminded me I better call her with my order (lol).

Here is what you will need to make these Potato Chip Cookies:

  • 1 Cup Crushed Potato Chips – Put into Ziploc Bag and Crush with a Rolling Pin
  • 1 Cup Unsalted Butter – Softened
  • 1/2 Cup Sugar
  • 1 Tsp Vanilla
  • 2 Cups Flour

Optional for Chocolate Drizzle:

  • 1/4 Cup Chocolate Chips of Chocolate Melting Wafers
  • 1 – 2 Tsp Shortening

Preheat Oven to 350

In Mixing Bowl Cream together Butter and Sugar. Add in Vanilla then fold in Flour and Crushed Potato Chips. Mix until smooth and mixture holds together. Form into 1″ balls and place 2″ apart on a lightly greased cookie sheet. Using a glass dipped in sugar flatten the cookies or use your fingers if you like.

Bake approx. 11-14 min till golden at edges.

Let Cool

For the Chocolate Drizzle:

Melt Chocolate in a double boiler, add a teaspoon of Shortening to thin chocolate {more if needed}. Using a fork drizzle Chocolate over the Cookies. Place in fridge a few minutes to “Quick Set” the chocolate, grab a Glass of Cold Milk and Eat !!

Makes 2-3 dozen cookies

    These are potato chip shortbread cookies!!! That is why Kitty LOVES them {she is a Lorna Doone fan too!!}
    I have had this recipe in my “TO MAKE” folder for 9 years!!!…..ummmmmmm I am a little backed up I guess!!!!
