How to Make Pumpkin Pie Pops with colored icing

I am so excited to share with you these adorable Mini Pumpkin Pie Pops I made. With the fall season right around the corner these cuties are the perfect treat for the kids and for upcoming Halloween Parties.

I had never made Mini Pie Pops before, but have been seeing them everywhere. So they were one of those things to try out on my to do list for some time now. So with the crisp air we have been having the past couple days it got me motivated to get into the kitchen and warm up by the oven.

If you are not familiar with Mini Pie Pops they are basically a Mini Pie on a Stick. I know cute right? So being it is so close to fall I wanted to do a fall theme pie and that is why I went with a Pumpkin Pie. Now not everyone likes Pumpkin Pie, including myself and that is OK because you can use any filling in these pies you want such as Apple, Blueberry, Peach etc…

These were also made with my Hubby in mind – he loves Pumpkin Pie and my son likes it too. My daughter not so much, but to my surprise she loved these. Maybe it had something to do with the Sugar Icing I coated them with – lol.

So lucky for you I documented Step by Step how to make these and they were super EASY to do. If you follow me you know I like EASY.  Remember this is the first time I made them and I took photos as I did it and I think they came out great – don’t you?

So here is what I used to make my Pumpkin Pie Pops:

  • Pillsbury Refrigerated Pie Crusts
  • 1 Cup of Canned Pumpkin
  • 1/2 tsp Cinnamon
  • A Sprinkle of Pumpkin Pie Spice Blend
  • 1 Egg
  • 1/4 Cup of Sugar
  • 1 Egg White (used for a wash on the Pies)
  • Popsicle Sticks or Lollipop Sticks

***Note: You can make your filling anyway you like it and use whatever flavors you want, but the above is what I used and according to the kids and Hubby it was Delicious.***

The Icing:

  • 1 Cup Powdered Sugar
  • 2 Tbsp Milk
  • 1/2 Tsp Vanilla
  • Food Coloring Gels (see in directions below)

So gather up all your ingredients. Get out a mixing bowl and add 1 Cup of the Pumpkin and then your Cinnamon, Pumpkin Pie Spices, Egg and Sugar. Mix it all up and set it aside.

Next sprinkle some flour on a flat surface and roll out one of your Pie Crusts. To make the Pie Circles I used a Glass (maybe 3″ in diameter) and pressed that into my dough. I started my first batch with  5 Pies so you will need 10 circles – Top and Bottom. Once you have them place the bottoms on a Cookie Sheet. Set the tops aside for now.

Next I created some decor using the excess Dough. For my pumpkin stems I started by making 2 dough snakes and then twirling them together and cutting to make 5 for my first batch of Pies. Next I cut out some Leaves for each of the Pies. And to add to the fun I cut out Pumpkin Faces for each of the Pies as well.

Next take your Pie Filling and add a Blob onto each Pie bottom. Then place your Popsicle Stick or Lollipop Stick on.  Then I stuck the stem in and topped it with the Pie Top.  I used the side of a Popsicle Stick to close it all up. And yes you will have some of the filling come out the sides. I just cleaned it up best I could- no biggy !!

Next I brushed some of the egg white onto the pie and placed on my Pumpkin Face and added the Leaf near the Stem on the top on each. then off they went into a preheated oven at 350 for about 15 minutes or until they got a golden brown. The last photo shows them all baked. I think they looked really cute baked right out of the oven, but I wanted to kick them up a notch with some color.

So to add some Sweet Color I made some icing.  Mix together the Powdered Sugar, Vanilla and 2 Tbsp of Milk – if it is too thick add a bit more milk, but do not make it too thin. Next I separated my icing to color. The larger amount I made Orange then I had Green for the leaves, Tan for the Stem and Black for the Face. I used Wilton’s Food Coloring Gels to make my colors.

Next I took a clean Paint Brush and painted the icing on starting with the Orange. Then I cleaned my brush and did all the stems Tan, then moved on to the Green Leaves and last I did the Face Black.The icing when it dries gives a nice hard shell that is sweet and yummy. I loved the way they looked in color.

And that is it !! Not hard at all.

My daughter had her friend over after school and she normally does not eat Pumpkin Pie either, BUT she ate it and liked it too.  I even snapped a picture of my son eating one, but shhhh he hates when I use his photos on my blog.

Are they so cute or what? I hope you give it a try. I forgot to count how many I made, but I would say it was around 12 or so from the ingredients I had.

Next I am making Apple Pies because that is my favorite.
