Taco Stroganoff – A delicious Taco Pasta perfect for parties

This Taco Stroganoff Recipe is EASY to make, delicious to eat and perfect for your next party or family dinner. Kids love to eat Tacos and they will love this Taco Pasta Dish and so will all the adults.

So my Sista Peep came over to cook us all dinner last night. It was her day off from work, but she loves to cook and she came with a new recipe to try. I know I am so lucky to have such a great Sista Peep who gave me a night off in the kitchen – love that.

So she had found this recipe for Taco Pasta over on The Girl who ate Everything Website (we love all her recipes) and she wanted to try it. At first I was skeptical because my kids love Taco Night and I was not sure how they would like this dish which was very different from our Normal Taco Night, but being I did not have to cook I was willing to give it a try.  It is always hard to find a recipe that everyone likes especially the kids.

Well I am happy to say this Taco Pasta which we have renamed Taco Stroganoff, due to the creaminess and similarity to Beef Stroganoff with a Taco Flavor Kick, was a MAJOR hit.  The kids asked for seconds, I had seconds, hubby had seconds and Sista Peep had seconds – so this recipe that I was skeptical about is now one that will make it into my Family Recipe Book as a definite Do-Over and a new Family Favorite.

Now even though I did not do the cooking I did document the process so if it was a winner I could share with you the recipe step by step. Good thing I did that because you are going to LOVE this and it really was EASY to make. In addition to that this Taco Stroganoff is a great dish for Parties, serves a lot of people and it is very Budget Friendly.

We doubled the Recipe so it made about 1 1/2 pounds of pasta and we changed a few things so I am going to give it to you how we made it and if you want to make less just cut it in half.

Here is what you will need to make this Taco Stroganoff:

  • 2 Lbs Ground Beef (you can also substitute Ground Turkey)
  • 1 1/2 Boxes (16 ounce Box) of Medium Pasta Shells or Pasta Shape of your choice.
  • 1 Large Onion Chopped
  • 2 tsp Minced Garlic (we used minced Garlic from the Jar, but you can use Garlic Cloves)
  • 2 Cans (14 ounce) Diced Tomatoes with Green Chilies
  • 2 Packets of Taco Seasoning
  • 8 Ounce Block of Cream Cheese
  • 1 Container of Sour Cream (16 ounces)
  • Salt and Pepper to taste
  • Shredded Mexican Cheese or Cheddar

Start by Boiling your Water for the Pasta and cooking that up. Drain and reserve about 1 Cup of the Pasta Water to use later. Set that aside.

In a Large Skillet start browning your Ground Beef over Medium-High heat until no longer Pink.  Right before the meat is cooked through mix in your Chopped Onions let that cook a few minutes and then add in your Minced Garlic.

Next add in the cans of Diced Tomatoes and Taco Seasoning Packets, mix and let simmer for about 5 minutes.

I also had to add a picture of my “Happy Spoon” one of my favorite mixing spoons Sista Peep bought me for Christmas one year – is that cute or what?

Now stir in your block of Cream Cheese and Sour Cream. Then add in your cooked Pasta, mix and add in your reserved Pasta Water. Season with Salt and Pepper to taste and simmer for about 5 Minutes or until the sauce thickens up a bit.

How EASY is that? We used the Shredded Mexican Cheese and sprinkled some on top if we wanted it – of course I wanted the Cheese so I did just that and so did everyone else !!

So what do you think? Are you gonna try this or what? I am telling ya – this is a WINNER !!! And perfect addition for any Party and even better for a Mexican Fiesta !!

    Could you please tell me what size the boxes of pasta are? My local store has several sizes of boxed pasta.

  3. Why yes I can and thanks for pointing that out – it is now updated. They were 16 ounce boxes – typical 1 pounders. U r so gonna LOVE this !!

I am glad u like the How tos – I think it makes it easier for people to see how a recipe works – I am and have always been a visual person – if there is no picture for a recipe then I pass it by.     Oh my!! Sitting here VERY full!! This is absolutely a keeper at out house!! The taste is just awesome. I tend to think that my family members are big eaters but this made my 12 inch chicken skillet runneth over!! LOL Next time I make it, and that will be soon, I will make only half the recipe. Other than that this is a very tasty dish.
