Moonbeams coconut ballsMoonbeams are a Peanut Butter and Honey Balls rolled in Coconut and truly out of this world. These little balls pack a big amount of sweetness making you want to grab for another one.

I have no idea why they are called Moonbeams, so if you are wondering your guess is as good as mine. My daughter found this recipe in one of her American Girl Magazines and asked to make them, and so she did!

This recipe was so worth the share with all of you because they are not only EASY (you know I love EASY) to make, but they are SWEET and delicious.

Here is all you need to make some of these Moonbeams:

  • 1/4 Cup Honey
  • 2 Tbsp Powdered Milk
  • 3 Tbsp Powdered Sugar
  • 1/4 Cup Peanut Butter
  • Sweetened Coconut to roll them in

All you do is mix together all the ingredients less the coconut. Then drop a small amount into the Coconut and roll into a ball. Place on wax paper and refrigerate until cold. Yup that’s it!!!

We were able to make 10 from this and next time we are doubling the recipe!!

Give them a try and see what you think. These would definitely be a great treat to serve up at your next party!!
