How to Make White Chocolate Macadamia Cupcakes

If you are looking for a delicious cupcake recipe using Macadamia Nuts than this is for you. In addition to the Macadamia Nuts they are topped with Toasted Coconut and the combination is so tasty I was amazed. They are so easy to make and I am going to share with you how right here. SWEET !!!
I just made these for the first time this weekend for my last BBQ of the summer. I decided on this recipe beacuse I just got a great deal on Chopped Macadamia Nuts and needed to come up with some ways to use them. My husband loves Macadamia Nuts and we all know they can be pricey, but when you find them on sale you have to take advantage. So I found this recipe for these cupcakes and decided to give them a try and was glad I did – They were a Hit with all including the kids.
Here is what you need to make these White Chocolate Macadamia Cupcakes:
- 1 Package of White Cake Mix & the ingredients to prepare it
- 1 Package (4 serving size) White Chocolate Flavor Instant Pudding Mix
- 3/4 Cup Chopped Macadamia Nuts (I added extra – lol)
- 1 1/2 Cups Flaked Coconut
- 1 Cup White Chocolate Chips
- 1 Tub (16 oz) White Frosting
So here are all my ingredients ready to go less the items needed to prepare my Cake Mix. Now I had a hard time finding the White Chocolate Pudding Mix, but I did find it in Sugar Free. I was nervous using Sugar Free, but in the end it worked out just fine and to think we may have saved a calorie or two was kinda nice. I also added in extra Macadamia Nuts – hey why not – we all love them and I had plenty on hand.
Next add in all the ingredients you need to prepare your White Cake Mix. Then add in your White Chocolate Pudding Mix and mix well. Once doe with that you can fold in your Chopped Macadamia Nuts. So Easy.
Line your Cupcake Pan with Liners and fill them with your batter. Recipe says you will get 20 Cupcake – I never get 20 Cupcakes. I ended up with 18. Then stick them into your oven on 350 Degrees for about 18 to 20 Minutes or until your Toothpick comes out clean.
While your Cupcakes are cooling you can prepare your Frosting. For this take your White Chocolate Chips and in a bowl stick them into the microwave to melt. Put them in for 2 minutes at 50% power, stirring every 30 seconds or so until melted and smooth. Once that is done let them cool for slightly and then mix then into your White Frosting.
To toast your Coconut just lay it out on a Cookie Sheet (ungreased) and stick in the oven at 350 degrees for about 6 minutes or until golden brown and let it cool completely.
Then just Frost your cooled Cupcakes and Top with the Toasted Coconut and you are good to go. How easy was that?

These really were delicious and one Cupcake I will definitely be making again – I actually think it may be on the top of my favorite list.
If you are making these for a Kids Birthday Party make sure no one has any nut allergies and you may want to leave some without the Toasted Coconut on top for those that may not like that flavor. Even without the Toasted Coconut they are wonderful. I had to leave some coconut off for my sister in law at the BBQ.
