Oatmeal Chocolate Chip Pumpkin Cookie Recipe

I was not kidding when I said I was baking up a bunch of Sweet Pumpkin Recipes this year. These Oatmeal Chocolate Chip Pumpkin Cookies were yet another hit with all, including myself who is not a major pumpkin lover.
These Pumpkin Cookies are combined with Oatmeal and Chocolate Chips with a nice hint of Pumpkin. Again they are not over bearing with pumpkin flavor, but just enough.
Not being a big fan of pumpkin I tried them and found them to be really good and they are also very moist from the use of pumpkin in them. They are EASY to make and a welcome change on the dessert table at your Fall or Halloween Party this year. I think the kids will devour them, trust me!!
What you need to make these Oatmeal Chocolate Chip Pumpkin Cookies:
- 1 Cup Butter, softened
- 1 Cup Sugar
- 1 Cup Brown Sugar
- 1 Egg
- 1 tsp Vanilla
- 2 Cups All Purpose Flour
- 1 Cup Quick Cooking Oats
- 1 tsp Baking Soda
- 1 tsp Cinnamon
- 1/2 tsp Salt
- 1 Cup Canned Pumpkin
- 1 Cup (6 ounces) Semi Sweet Chocolate Chips
In a large mixing bowl, cream the Butter and the Sugars. Beat in Egg and Vanilla.
Combine the Flour, Oats, Baking Soda, Cinnamon and Salt in another bowl and then add to the creamed mixture alternately with the Pumpkin.
Stir in the Chocolate Chips.
Drop the dough on your cookie sheets by the Tablespoonfuls about 2 inches apart and bake for approx 9-12 at 350 or until golden brown. Cool on your wire cookie rack.
This batter will make about 4 dozen cookies – holy moly!!!
